Spelt is wheat free - but not gluten free. Perfect for people on wheat restricted diets. Better tolerated then most grains, spelt contains more crude fiber and protein then wheat. Enjoyed for it's nutty flavour, spelt also has a number of nutrients that are easily absorbed into the body.
Perfect for whole grain breads, sprouting and as a side dish. Sifted spelt flour can be substituted for all purpose flour - the left over bran can be added to cereals, muffins and other baked goods for additional nutrients.
