LOV'N FROM THE OVEN CHOCOLATE COOKES - FROM THE 'ULTRA GEL ANSWER BOOK'              printable version

1 cup butter or margarine 1 1/2 cup sugar OR 1 cup Xagave 2/3 cup cocoa 3 Tbsp. ULTRA GEL 2 eggs 2 tsp. vanilla 2 cups flour  3/4 tsp. soda 1/2 tsp. salt  1 cup chopped nuts (optional) 1-2 cup chocolate, vanilla or peanut butter chips       The ULTRA GEL in this recipe makes this one of the softest cookies you will make.  They freeze very well, without losing texture or softness.

Cream butter or margarine and sugar or Xagave. Blend in cocoa and ULTRA GEL. Add eggs one at a time, beating after each addition. Mix in vanilla. Add dry ingredients to creamed mixture. Blend in nuts and chocolate, vanilla or peanut butter chips. Drop by spoonfuls onto baking sheets. Bake at 350° for 8-10 minutes. DO NOT OVERBAKE!   Transfer cookies to rack and cool completely. Store in airtight container or freeze.
