  •     Bread Recipe of the Month    

     Light Yeast Kuchen"Eat More Whole Grains" Cookbook
    • 3 1/2   cups lukewarm water
    • 1 1/2 cups oil
    • 6 eggs
    • 1 cup sugar
    • 2 tsp. salt

    TIP*-BEATING MARGARINE WITH THE BOSCH: To prevent beaters from bending, margarine or butter must be at room temp. when beating it with the Bosch.

    Place the liquid ingredients in the Bosch bowl first ( water, sugar, oil and eggs), with the dough hook  attached.  Add 1/2 the flour and the yeast, salt, baking powder, and dough enhancer on top of the liquids.  Turn on speed one and mix for 20 to 30 sec.. ( For a Universal Plus, turn speed up to speed 2) and add remaining all purpose flour one cup at a time, until dough starts to clean the sides of the bowl.  Let knead 5 min. (7 min if using 1/2 whole wheat flour) until gluten has developed.  On an oiled counter, divide the dough into 3 even pieces.  With greased fingers, press each dough onto a greased cookie sheet, until 1/2 " thick.  Brush with beaten egg and sprinkle with crumbs (Recipe follows) Cover and let rise until double and bake at 350 degrees F. for 20 min. until lightly browned.

    CRUMBS:

    • 4 cups all purpose flour
    • 1 cup sugar
    • 1 1/2 egg yolks
    • 1 1/4 cups margarine or butter at room temp.*

    MAKING THE CRUMBS WITH THE BOSCH:  Put the beaters or the cookie paddles in place in the Bosch bowl.  Add all ingredients.  Cover and JOG on M for 10 to 12 times or just until crumbly.

    For Fruit Kuchen:  After brushing with beaten egg, top with: sliced plums, peaches, or apples, cherry, raspberry. strawberry, blueberry or pineapple filling.  Proceed to sprinkle with crumbs

     


    Recipe of the Month  

    My Favorite Chocolate Squares
    • 3 oz. chocolate chips
    • 1 can sweetened condensed milk
    • 1 tbps. butter or margarine
    • 1/4 tps. salt
    • 1/2 cup chopped walnuts*
    • 1 tsp. vanilla
    • 1 cup butter or margarine (room temp.)
    • 2 cups brown sugar
    • 2 eggs
    • 2 tsp. vanilla
    • 2 1/2 cups all purpose flour (can use some whole wheat flour)
    • 1 tsp. soda
    • 1 tsp. salt
    • 3 cups quick cooking rolled oats (we roll ours fresh with the Flaker attachment)

    In a Double boiler, melt chocolate chips and add in sweetened Condensed milk and 1 T. butter and mix well with spoon.  Remove from stove and add 1/4 tsp. salt and chopped nuts and 1 tsp. vanilla, and set aside.   In the Bosch mixer with the cookie paddles or whip,  cream butter and sugar, add add eggs and vanilla and mix well.   Add dry ingredients and mix.  Add Rolled oats and JOG on the M until well mixed.  In a greased 9"x13" pan, press 2/3 of the flour/oats mixture.  Top with chocolate mixture and finally drop remaining flour/oat mixture on top.  Bake at 350 degree F. for 25 min. until brown.  Cool and cut into squares.

     Tip* To quickly and perfectly chop nuts such as walnuts pecans and macadamia nuts etc. for cookies, candies and cakes, use French Fry blade in Slicer/Shredder

    ** Can substitute soft or hard wheat flour

    BOSCH FLAKER ATTACHMENT

    We can make our own grains into delicious, fresh, nutritious rolled flakes, by using this flaker attachment for the Bosch machines.  It fits where your bowl goes and will let you continuously roll the grains into flakes.  The steel rollers can be opened to clean out easily.  We roll oats, wheat, rye, barley etc.   The grains will store a lot longer than flakes do, so to us, it makes sense to take a few min. and flake our own to get the freshest taste to our cereals and baked goods.
