Rye is lower in protein and gluten then wheat. Used mostly for making rye breads, including pumpernickel. Rye breads are mostly denser than wheat breads, so very often rye flour is mixed with regular wheat flour to lighten the loaf. It can also be sifted to be used as a substitute for all purpose flour.
