ONE SOURDOUGH - FOUR WAYS TO USE IT

I am all for saving time--especially in the kitchen when baking at this time of the year.  I just don't want to sacrifice a good result so I have found this wonderful Monster Dough recipe that I have had for years in my old recipe files that I was sorting out.  This is a wonderful Sourdough-type recipe which makes a great tasting product no matter what type of baked good you make with it,  and what is really great is that it keeps in the fridge and can be added to over time to keep on using for several weeks.  The yeast cinnamon buns are as yummy as the muffins, the biscuits and even the coffee cake.  The steps are easy to follow and even if you don't own one of our Bosch Universal mixers, you could still make these recipes (although the Bosch Mixer makes it really easy)  The printable recipe for the whole Monster Dough is at the bottom.  You will notice that I suggest you choose the correct mixing attachment for the Bosch machines for each different recipe depending on the consistency of the mixture. We have a quick guide, if you click here, describing which one to choose for what type of mixture. 

  The Monster Dough - This is really a basic sourdough starter:

2 Cups warm water
2 Cups Whole Wheat Flour (we are milling our own fresh with the Nutrimill grain mill)
2 tsp. sugar
1 Tbsp. Saf yeast

Mix together these ingredients until smooth using the cookie whisks or cookie paddles.  Cover with a cloth and set in a warm place for about 5 days.  Refrigerate.   To use, mix it and pour off the amount required for the recipe and then replenish with 2 cups of whole wheat flour and 2 cups warm water and 1/4 cup of sugar.  Mix it together and put it back in the fridge. 

Monster Cinnamon Buns

2 cups whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 egg
1/3 cup oil
1 cup monster dough starter

In the Bosch bowl equipped with the cookie paddles, place 1 cup of the monster starter and add the oil and egg.  Turn on for 30 seconds to beat well.  Add remaining ingredients and mix well,  adding 1 cup at a time until dough has collected in a soft ball.  Dough is quite soft so add flour if you need to handle on the counter.  Knead it slightly by hand and then roll out on a well floured board and spread butter cinnamon, and brown sugar on it (you could add raisins or dried cranberries if you wish)  Roll up lengthwise and slice into 3/4 inch slices.  Add to a greased baking pan and bake immediately in a 400 degree F. oven for 15 to 20 min.   This dough also makes a good topping for meat pies.

Monster Muffins

1 1/2 cup whole wheat flour
1 tsp. baking soda
1/2 cup brown sugar
1 tsp. salt
1/2 cup rye flour or 1 cup rolled oats
1 egg
1/2 cup butter milk
1/2 cup oil
2 tsp. grated orange rind
1 cup monster dough starter 

In the Bosch mixer equipped with the wire French whips or cookie whisks, mix the first 5 dry ingredients together and make a well in the middle.  Add the remaining ingredients and mix well until blended together.  Fill greased muffin cups 3/4 full and bake at 375 degrees F. for 20 to 25 min.  (You can add some nuts or dried fruits etc. as well)

Monster Biscuits

2 cups whole wheat flour
1/2 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
1/2 cup shortening
1 cup monster dough starter
2 tsp. honey
2/3 cup milk

In the Bosch mixer bowl equipped with the cookie paddles, combine first 4 dry ingredients with the shortening until well mixed.  Add the monster starter, and the remaining ingredients and jog the machine until well mixed.  Remove from the bowl and pat into a 1/2 inch thick flat rectangle and cut biscuit rounds.  Place on a greased cookie sheet and bake 20 min. at 400 degrees F.

 Strudel Myre Monster Coffee Cake

1 cup flour
2 Tbsp. sugar
1/2 tsp. salt
1/2 tsp. soda
1 cup monster dough starter
1/4 cup oil

Mix the 4 dry ingredients together in the Bosch bowl equipped with the cookie whisks.  Add the monster starter and the oil and mix will.  Press into a greased 9x13 pan and spread with apple, cherry, blueberry or peach pie filling.  Top with the following mixture.

1 cup flour
1/2 cup brown sugar
1/2 cup margarine or butter
1/2 tsp. cinnamon

Bake at 350 degrees F for 25 to 30 min.  This one is really really good!!!
