Bulgar is wheat that is pre-boiled, dried and sorted. Bulgar is particularly popular because while it is whole wheat, its preparation decreases cooking time, making it a more effective addition to any meal.
Bulgar is high in minerals, protein and fiber. This combination aids the digestive system by absorbing water and promoting more timely waste elimination. Like other wheat products, bulgar can help reduce the risk of strokes, type 2 diabetes, heart disease, asthma, and high blood pressure.
Bulgar is most often made of durum wheat, however, any kind can be used. It is a versatile base for a variety of meals and is often added to side dishes or salads. Sometimes referred to as “Middle Eastern pasta,” bulgar is most commonly known for its role in the minty vegetable grain salad called tabbouleh.
