Easy Peasy Cake Pops in your Bosch Mixer Friday, August 3, 2012

Thanks to bakers like bakerella, cake pops, cake balls, cupcake pops and cupcake bites have become increasingly popular.

If portion control is an issue for you (yes, I am guilty of that problem!), these little cake balls are a perfect addition to your baking repertoire.  Quite simply they are made by mixing cake with cream cheese cake icing.

Here are the basic instructions - I made mine with leftover chocolate cake (yes, there is such a thing as 'leftover' cake!) and a tub of cream cheese cake icing. Please don't limit yourself - try this with your favourite cake and icing recipes

Using leftover cake, or a newly baked cake from a simple box mix or your favourite cake recipe, break up the cake and drop it into your Bosch Mixer bowl with the French Whips attached.

Be sure to place the splash ring and lid on the bowl.  Using the momentary switch blend the cake until it is in crumbs.

Change over to the dough hook and add a tub of cream cheese icing (or the equivalent amount of homemade icing

Using the Momentary switch on your bosch, mix in small bursts until the mixture comes together as a dough.

Remove the dough from them mixer, using your hands form it into a large ball.  Place in bowl, cover with plastic wrap and set in refrigerator for at least an hour

Remove the dough from the fridge.  Spray hands with a little Vegelene and form the dough into donut-hole size balls

Get creative!  Poke lollipop sticks into each ball, dip in chocolate, sprinkle with decorations...the options are endless!
