PRESSURE COOKING COMFORT FOODS
Well the weather has changed and the days and nights are getting colder by the day. Our bodies naturally crave more sustinance and bulk in the food that we eat to keep our systems moving and our bodies warmer. Comfort foods that are full of body, flavour and substantial ingredients like meats, vegetables, potatoes, beans and rice are usually the foods our bodies crave to satisfy our hunger. Many of these types of foods take longer to prepare though, so I thought that we would share some of the secrets we use to speed up the process by using a pressure cooker. We included some of our favorite recipes as well so we hope you will be able to try them out.
Contrary to belief, modern good-qualitly pressure cookers are safe to use. Gone are the days when they would rock, and whistle. Gone are they days when you made certain all the children were safely far away from the kitchen when you were using a pressure cooker. One of my favorite things to make in the pressure cookers is black beans or turtle beans. We couldn't believe it when we found out these were unavailable to us in Europe. They are wonderful as refried beans or in salsa, but also make a great side dish as well. All beans take about 1/3 of the time to cook in a good pressure cooker and do not need to be soaked ahead of time which means in our very busy world we don't have to really plan that far ahead.

We love doing pot roasts in our pressure cooker as well. We simply put an empty pressure cooker on a high heat burner and wait a minute or so until it is hot, and place the roast on the bottom to sear for a minute or two and then after the pours have closed and some of the oils have come out when can easily turn it over and sear it on the other sides. After it has browned for a few minutes, we just add the lid and a 3 to 4 lb. roast will cook under pressure for 30 min. and when it is open will have not shrunk (like it does in the cremator or should I say oven) and will have lots of juices to make a gravy. We can add some potatoes and bring it back to pressure for 6 min. and they will be cooked as well. Here is our printable recipe for pork tenderloin which is done similarly.
Soups and stews are easy to make and also cook in about a third of the time as doing them in a regular pan on the stove top. One of favorites is this Split Pea, Sweet Potato and mint soup that uses some apple in as well. It is so easy to make and the taste is to die for!!!
