Apples Apples Everywhere!
On the West Coast at this time of year, we have an abundance of apples. They are all kinds of varieties to choose from and they are the cheapest they will be all year. So let's take advantage of the sales and gets some apples because there are a myriad of things that you can do with them. You can dry them as slices in your dehydrator to use latter during the winter, make an applesauce fruit leather or freeze them to use in a dessert or bread or just make apple sauce using your berry press on the front of the Bosch meat grinder. You also can use them fresh to get the most nutrition from this all-purpose fruit. I have included some of my favorite apple recipes today, in hope you may venture forth and try something you haven't tried before.
Apple Pie Bread - This is one of our favorite Quick Bread recipes and makes a delicious moist bread that can be used as toast or eaten as a healthy dessert as well. Click here for printed version.
Apple Pie Filling
2 Apples diced small (I like granny and golden delicious)
2 Tbsp Melted Butter
1/4 C Brown sugar
1/4 C White Sugar
1 tsp Cinnamon
1 tsp Fresh Nutmeg
1 Tbsp Cornstarch
Bread
1C Room Temp. Unsalted Butter
1/4 C Sugar
1/4 C Brown Sugar
2 Eggs
1 Tbsp Vanilla
2C Flour (AP or ½ AP & ½ whole wheat)
1 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp. salt
Filling: Combine all ingredients except cornstarch in a sauce pan. Boil then add cornstarch and stir until thick. Let cool.
Bread: Using a Bosch mixer with the cookie paddles or batter whisks, cream butter and sugar together till fluffy. Scrape the bowl at least twice. Add eggs one at a time, mixing after each one. Add vanilla. Next add pie filling. In a separate bowl sift together all your dry ingredients. Add to dry ingredients to wet mixture in mixer bowl and only mix till incorporated. Do not over mix or bread will be tough. Bake at 325 degrees F. for 45-55 min. Try not to open the oven while baking. OPTIONAL: add a streusel topping in the last 15 minutes of baking.
Applesauce Walnut Bread - The previous recipe is a quick bread but this Applesauce Walnut Bread is a true yeast risen bread that will give you a tasty not-so-sweet bread that you could use in a sandwich if you wish. The applesauce is basically the sweetener for the recipe. This recipe can be doubled for your Bosch Universal Plus machines. Click here for printed version.
1 cup applesauce
3 Tbsp. oil
1 cup buttermilk
1 cup warm to hot water
5 1/2 cups whole wheat flour
2 1/2 tsp. salt
1 Tbsp. Saf yeast
1 Tbsp. dough enhancer
1 Tbsp. gluten
2/3 cup walnuts, toasted and chopped
Heat applesauce until it is quite warm. Slowly stir in oil and buttermilk and warm up. Add all liquids into the Bosch Universal Plus bowl equipped with the dough hook. Add 3 cups of flour, yeast, dough enhancer, gluten and salt. Let knead on speed 1 for 20 sec. and add remaining flour slowly until dough starts to clean the sides of the bowl. Turn up to speed 2 if using the Bosch Universal Plus and let knead for 8 min. Add the walnuts slowly and mix in for about 1 min. Oil counter and hands and stop machine and remove dough from the bowl. Divide the dough in half and shape 2 loaves to go into 8”x4” greased pans. Let rise until almost double in a warm place. Bake at 350 degrees F. for 30 min. Remove from pans and cool.
Apple Crumb Cake from Cooking and Baking with Fresh Ground Flour cookbook-- This is a wonderful cake that uses soft wheat flour with the apples in the cake and a great brown sugar glaze.
Cake
1/2 cup plus 2 tsp. unsalted butter
1 1/2 cups packed brown sugar
2 large eggs
2 cups fresh ground soft wheat flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
1 cup sour cream
1 tsp. vanilla extract
2 cups peeled, cored apples, chopped
Crumb Topping:
1 cup packed light brown sugar
1/2 cup freshly ground soft wheat flour
1/2 tsp. ground cinnamon
4 Tbsp. unsalted butter softened
Preheat the oven to 350 degrees F. Lightly grease a 13x 9 glass baking dish with 2 tsp. of the butter. In the Bosch Universal Plus bowl, cream together the remaining 1/2 cup of butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after the addition of each egg. In a separate bowl, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples, Pour into the prepared baking dish, spreading out to the edges.
To Make the Topping: In a bowl, combine the sugar, flour, cinnamon, and butter and mix until it resembles coarse crumbs. Sprinkle with topping over the cake and bake until golden brown and set, 35 to 40 min. Remove from the oven and let cool on a wire rack for at least 10 min.
Brown Sugar Glaze: In a bowl combine 1/2 cup packed light brown sugar, 1/2 tsp. vanilla and 2 Tbsp. of water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm
